In traditional Mediterranean cultures, food is a ritual to
be savoured as opposed to really fuel to get us thru the day. "They sit
right down to devour," says Dr Stanton. "That gives us the
possibility to consume ingredients like spinach and peas, which you cannot eat
on the run."
